Gormeh Sabzi (Stew)

How to Cook Ghormeh Sabzi

“Khoresh-e Ghormeh Sabzi” is one of the most delicious foods among Persian cuisines. The combination of flavorful and aromatic herbs, lamb cubes, beans and dried Persian limes make the khoresh very tasty and nutritious.

Ingredients:

- Large onion, finely chopped and fried
- 1 bag of Seven & Half mixed herbs (Ghormeh Sabzi)
- 1 pound stew meat (beef, lamb, veal, etc.), cubed
- 1 ½ cup water
- 1/2 teaspoon turmeric
- 1/3 cup of cooking oil
- 6 dried limes (Limoo Amanee) or ½ cup fresh lime juice
- ¾ cup pre-soaked kidney beans
- Salt and pepper as needed
- A touch of saffron (optional)

Non-Fried Ghormeh

Stove cooking:

1. Sautee Mixed Herbs with 1/3 cup of oil over Medium heat for 15 minutes, stir frequently. Set aside.

2. Sautee chopped onions in 2 tbsp of oil until become golden brown. Add the meat, turmeric, salt, pepper and fry until all sides are brown. Add beans, Sauteed herbs and dried lemons. Add water to cover 2 inches, bring to a boil on high heat for 2 minutes, cover and simmer for 2 hr.

3. Serve hot with basmati rice, salad shirazi and yogurt cucumber mix.”


Ghormeh Fried

Stove cooking:

1. Sautee chopped onions in 2 tbsp of oil until become golden brown.

2. Add the meat, turmeric, salt, pepper and fry until all sides are brown. Add beans, Sauteed herbs and dried lemons. Add water to cover 2 inches, bring to a boil on high heat for 2 minutes, cover and simmer for 2 hr.

3. Serve hot with basmati rice, salad shirazi and yogurt cucumber mix.
